Help me help my gramps with his low sodium diet?

About two months ago my grizzly gramps went to the ER because his blood pressure was so high it was making parts of his body shut down. The doctors adjusted his medication and told him to follow a sodium restricted diet (between 1000-1500 mg per day). Well, he's tried prepared meals and other foods that are low or no sodium and has thus far hated the taste. I've already given him a few recipes that actually taste good, but what I'd like to do is throw together a simple cookbook for him that he can use when I'm not there to help him. I would appreciate any recipes for breakfast, lunch, or dinner anyone can give me. Please keep them simple–gramps isn't much of a cook–and please include TOTAL mg of sodium. Here are some things he likes:
Eggs (and other salty breakfast delights)
Chinese Food
"Home Cooking" (casseroles, stews, etc)
Cheeseburgers
Italian Food
(You can probably see where his problem started!)
Yes, I know I can get lots of recipes from websites. But the website can't tell me if tastes good–that's what I'm after here!!! I asked on Y!A because I wanted to hear from REAL people.
